How to Make Homemade Kombucha (Step-by-Step)

This is the process I follow every week. Once you get into a rhythm, it’s easier than making sourdough or yogurt.

Step 1: Brew the Sweet Tea

  • Boil 4 cups of filtered water.
  • Add 4–5 bags of black or green tea. Steep for 5–7 minutes.
  • Stir in 1 cup of sugar until fully dissolved.
  • Add 8 cups of additional cool filtered water.
  • Let the tea cool to room temperature.

Step 2: Add SCOBY and Starter Liquid

  • Pour cooled tea into your clean 1-gallon jar.
  • Gently add the SCOBY and 1–2 cups of starter tea (from a previous batch or store-bought raw kombucha).

Step 3: Ferment

  • Cover the jar with cloth and secure with a rubber band.
  • Let sit in a warm, dark area (70–75°F) for 7–10 days.
  • Taste after Day 7—if it’s tangy but not too sour, it’s ready.

Step 4: Bottle and Flavor (Second Fermentation)

  • Remove the SCOBY and set aside with 1–2 cups of tea for your next batch.
  • Pour kombucha into swing-top bottles.
  • Add 1–2 tbsp of fresh fruit juice, chopped fruit, or herbs for flavor.
  • Seal and ferment for 2–3 more days at room temperature for fizziness, then refrigerate.

Favorite Flavored Kombucha Ideas

Here are a few flavor combos I’ve tried and loved—feel free to get creative!

  • Ginger + Lemon (my favorite!) – Fresh grated ginger and a squeeze of lemon juice
  • Blueberry + Mint – Add crushed blueberries and a few mint leaves
  • Pineapple + Jalapeño – Sweet and spicy with a refreshing kick
  • Hibiscus + Orange Peel – Tangy and floral
  • Strawberry + Basil – Sweet and slightly savory

Pro tip: Always burp your bottles once a day during second fermentation to release pressure.
